Baked Sweet Potato Fries
French fries are a guilty treat that I often crave but if I make them with sweet potatoes, I can satisfy my craving and feel good about it too. Sweet potatoes are rich in many vitamins and minerals, and provide an excellent source of beta-carotene, vitamin C and potassium. They are definitely considered a healthier option than regular potatoes. They have a lower glycemic index, more fiber and contain excellent amounts of vitamin A….so the next time you’re craving fries, make these baked sweet potato ones and pat yourself on the back for making a healthier choice.
INGREDIENTS:
2 large sweet potatoes, scrubbed clean (organic if possible)
2 tbsp olive, canola or melted coconut oil
1 1/2 tsp garlic powder
1/2 tsp sea salt
1/4 tsp black pepper
PREPARATION:
Preheat oven to 315c.
Cut sweet potatoes into thin, even match sticks with a very sharp knife.
Place the cut sweet potatoes in a large bowl, drizzle with olive oil and sprinkle with salt, pepper and garlic.
Transfer fries to 2 large baking sheets and arrange in a single layer (with lots of space in between them) to ensure they crisp up.
Bake for 10-15 minutes and flip the fries to cook on the other side. Bake for an additional 10 to 15 minutes until brown and crispy.
Remove from oven and either serve as is, or with a bit of spicy mayo made by stirring in 1-2 tsp of sriracha into about 1/4 cup of plain mayonnaise.
Serves one greedy person as a snack or two people with “normal” appetites.
