Super Green Smoothie

Smoothies are such an easy way to get your daily dose of fruit and vegetables. Just throw everything into the blender and press a button.  I love fresh green juices as well but cleaning the juicer is always a bit of an ordeal.  Smoothies are the way to go when you are in a hurry, or, are just plain lazy like me.

Green smoothies with strong dominating flavors such as kale, celery or cucumbers are often a bit too “green tasting” for my kids but spinach is a completely different story.   Spinach is very mild and relatively flavorless. When it’s combined with lots of tropical fruits as it is in this smoothie, I don’t think you can taste it at all. The only hint that there’s a green vegetable in it, is the colour. It tastes like an alcohol-free version of a tropical frozen daiquiri.

INGREDIENTS:

1 1/2 cups baby spinach
1 cup frozen pineapple chunks
1 cup frozen mango chunks
1 medium ripe banana
1 1/2 cups unsweetened almond milk
1 tsp vanilla extract

PREPARATION:

Place all ingredients into your blender and blend until smooth and creamy. Add extra almond milk or water if the smoothie seems too thick for you.

Serve immediately.

Yields about 750ml, enough for 4 small glasses of smoothie.
